Chorizo, Lentil & Chickpea Soup

Olive oil
100g chorizo cut into small chunks
1 large onion, chopped
2 carrots, halved lengthways and thickly sliced
2 stalks celery, halved lengthways and thickly sliced
1 tsp smoked paprika
big pinch chilli flakes
6 tbsp red or green lentils
1 x 400g tin chickpeas - drained and rinsed
750ml chicken stock
parsley (optional)

Heat 1 tbsp of olive oil in a pan. Fry the chorizo for 2 mins. add onions and cook for 5 mins. Add carrots and celery and cook for 5 mins. Add paprika and chilli flakes and cook for 1 min. then add lentils, chickpeas and stock.

Simmer for 20-25 minutes until the lentils and vegetables are tender. Finish with chopped parsley if you like.
